Motivational Monday & Mache (Watercress) Salad!

Happy Monday to you! I LOVE Mondays. It’s the start of a brand new week and the chance to make something amazing happen in your life. Fridays are great and all, but I find it difficult to try and start something new on Friday. The weekend looms large and with it more opportunity to eat less than healthy and slip out of an exercise routine. But Mondays represent something fresh and clean.

If you’ve had a less than stellar weekend in the healthy eating and exercise area, don’t let that bring you down. Forget about sins of the past (because they’re in the past) and bring your mindset into the present! Living in the present moment represents one of the best ways to keep you focused on your goals. Too many times we dwell on mistakes of the past and that keeps us paralyzed with guilt and unable to concentrate on the present. When fixated on errors in the past or obsessed about what might happen in the future, the present gets lost in our minds eye; and, the present characterizes the only moment where change can happen.

So, on this Monday, really be present with yourself. Don’t think about the long week ahead, instead think about the newness of the week and how this could be the beginning of creating a whole new you. When you live in the moment and concentrate on performing well the tasks at hand, you will be creating a joyful future. You must make a habit of steering your mind toward the wholesome and the positive and away from worry and regret. Your brain needs to be trained to alert you when your thoughts drift toward the negative (such as regrets of the past or worry about the future). You can actually make positive thought a habit. The experts say it takes about twenty-one days to form a new habit. I say give yourself a month of conscious positive thought (no matter what circumstances say) and you will be well on your way to living in the present.

Smile, because today is filled with unending possibilities! You alone control your attitude and if you keep it optimistic and hopeful, this Monday will be infinitely better! When past mistakes come into your consciousness, forgive yourself and others who may have hurt you and then let those pains drift away down the river of thought.

It’s okay to dream about the future, but don’t let that dreaming get in the way of working hard today. Focusing on a better tomorrow is great, but a better tomorrow rarely arrives without hard work today!

I love the following saying by Mahatma Gandhi. If you make it part of your consciousness, your Monday will be off to a fantastic start!

“Keep your thoughts positive, because your thoughts become your words.

Keep your words positive because your words become your behavior.

Keep your behavior positive because your behavior becomes your habits.

Keep your habits positive because your habits become your values.

Keep your values positive because your values become your destiny.”

So don’t dread Monday, embrace it and all the wonder the new week brings!

On Mondays, I like to eat really green because I’m likely to have eaten less healthy than usual over the weekends. The following salad is so simple to make and incredibly delicious and filling. I make a HUGE bowl of it and down the whole thing. Feel free to substitute your favorite veggies or greens!

Mache Salad

1 large bunch of Mache (watercress)

10-15 Cherry Tomatoes

¼ – ½ Cup walnut halves

¼ Cup dried cranberries

Several Kalamata olives chopped

¼ cup raw sheep’s milk Roquefort cheese crumbled (I rarely eat cheese, but raw sheep’s milk cheese is a cheese that digests easily and is easy on the system. Try to find a source that treat their sheep well!).

1-2 Tbsp high quality Olive oil

Good splash of high quality balsamic vinegar (I order mine from a source in California that is amazing and has great prices).

Fresh cracked pepper to taste

Sea salt to taste

Put all ingredients in a large bowl, toss thoroughly. Enjoy!
