Super Saturday & Pancakes!


Today’s post will be short! Too many awesome things going on today. 

Saturday rundown!

Pancake & potato breakfast. Family philosophical discussion about life. Game with my teenager. Run in the beautiful Idaho sunshine. Yoga. Raw food get together. Movie with friends tonight. What awesomeness are you doing today? Do at least one (or maybe ten) things you love! Get Out. Get Active. Get Healthy. Keep Shining. Peace Out!

Okay! Here’s a fabulous, easy to make recipe that kids and adults will devour! It’s vegan and gluten free — but don’t tell anyone and they’ll never know!  

Chocolate Chip-Butterscotch Pancakes:
1 Cup GF Flour (I use a mix of rice, sorghum and tapioca flours)
1/2 tsp baking powder
1/4 tsp salt
1/3 cup ground flax
3 tbsp coconut sugar (or other sweetener)
1 Tbsp ground flax mixed with 3 Tbsp water (let sit for a few minutes)
2-3 TBSP Vanilla
1 Cup water
1/2 cup vegan chocolate chips
1/2 cup butterscotch chips
Mix flour, baking powder, salt, sugar and ground flax together. Mix in the rest of ingredients and stir lightly. Using a 1/3 to 1/2 cup measure drop batter onto lightly greased griddle or very hot skillet and cook around 8 minutes per side. So easy. So delicious!
