Eat your greens, for the shine!
Yes, I am going to wax poetic about kale (and other greens) – and I’m not the only one! It seems everyone is singing the praises of kale these days – and for good reason! This funny looking leaf is a veritable powerhouse of nutrients. Other leafy types that are making news are Swiss chard, rainbow chard, collard greens, mustard greens and spinach.
How do I love my greens? Let me count the ways. I love the: vitamin C, thiamine, vitamin K, beta-carotene, folate, calcium, iron, magnesium, potassium and believe it or not, the omega fatty acids! What’s not to love?
Mix one of these tasty plants with rice, millet, quinoa – or another whole grain – top it with a little balsamic vinegar, fresh cracked pepper and a dash of sea salt, and you have yourself one nutritionally packed dish that can be served up in a jiffy with just a little forethought!
On the weekend, when you have a little more time, pull out one of your big soup pots and cook enough whole grain (rice, millet quinoa etc.) to last you and the family all week. Buy a good bunch of greens from the store, wash and dry them and store them in a semi-air tight baggie or Tupperware. Now you have a complete dish ready to go when you get home from a long day of work! Just pull out the grain, heat it up in the micro, add the greens and the toppings and voilà, an awesome dinner ready in less time than it would take you to go through the drive thru! You could also add some pine nuts, slivered almonds or your favorite nut to fancy it up a bit. You can eat as much of this dish as you desire, because it’s loaded with healthy carbs and fiber rich greens! Your body deserves this kind of nutritious fast food – so eat up and enjoy!
